We have been starting to think about what we want to do at each port and the boys mentioned that on at least one of the port days. So far here is what I have heard that stays open while in port:
pools (on sundeck and in the Solarium)
kids H2O zone
rock walls
zip line
WindJammer buffet
Main Dining Room
some specialty restaurants
That is all I know of right now.
